Project 8 Winery
Applying gravity
Project 8 winery will be both a destination and an experience. The winery’s site is located in Placer County, California, along a route from Sacramento to Lake Tahoe. The sloping site was selected based on the client’s desire for a multi-level production facility that facilitates a gravity-flow winemaking process. Manufacturing, fermentation, and cellar storage will all be underground, creating a layered approach that supports grape cultivation, optimizes harvesting and processing, and ultimately leads to enjoyment of the final vintage. The destination will also include a restaurant and tasting room.

Underground wine caves for cellaring allow for year-round temperature moderation. Investment in these strategies cultivates longevity for the winery and a legacy that could continue for generations.
SEA incorporates sustainability into the winery in several ways, with the most apparent and innovative being the design’s support of gravity-flow winemaking. Gravity alone will transport and filter the wine, reducing electricity consumption.
Gravity also facilitates the reclamation of water used for winemaking, allowing it to be reused in the vineyards.
The winery will offer visitor experiences including an elevated restaurant with 360-degree views of the vineyards and the surrounding landscapes.
A tour route winds through the manufacturing areas on catwalks above stainless steel tanks, allowing visitors to visualize and experience the wine-making process. SEA’s design in each of Project 8’s spaces is inspired and informed by its respective stage in the winemaking process.
